Banana "Ginger"bread

Banana bread went on a little holiday vacation and came back wearing gingerbread spices.


If banana bread and gingerbread had a cozy little baking baby, I imagine it would taste a lot like this.


This Banana “Ginger”bread is soft, moist, warmly spiced, and packed with ripe banana flavor, but the molasses and ginger give it that unmistakable gingerbread personality.


The best part? You don't need anything fancy. One bowl, a loaf pan, some very ripe bananas, and a few warm spices are pretty much all you need.

It's familiar enough to feel like classic banana bread, but different enough that you'll wonder why you haven't been putting gingerbread spices in your bananas all along.


So... Why “Ginger”bread?

I know what you're thinking.


Is this banana bread or gingerbread?


Yes.


Okay, technically it's banana bread.


But between the molasses, ginger, cinnamon, cloves, and nutmeg, it definitely has some gingerbread energy.


The banana keeps the loaf soft and naturally sweet, while the molasses and spices bring that deeper, slightly rich flavor we expect from gingerbread. It's a little bit unexpected.


And that's exactly why I like it.

The Riper the Bananas, the Better

This is one of those recipes where the ugly bananas are actually the good bananas.


The more ripe and spotty your bananas are, the better.


They're sweeter, softer, and easier to mash, which makes them perfect for banana bread. So don't throw those bananas away just because they've started looking questionable.



That Cinnamon Sugar Topping

The topping is technically optional.


But I have a hard time calling something optional when it creates a crackly, cinnamon-sugar crust across the top of the loaf.


The little bit of ginger mixed into the cinnamon sugar makes it even better.


As the bread bakes, the topping creates this slightly crunchy, crumbly layer that contrasts with the soft banana bread underneath.


So yes, you can skip it... But I wouldn't.


My Best Baking Tips


Don't Overmix

Once the flour goes in, mix just until everything comes together.


Overmixing can make banana bread dense and chewy instead of soft and tender.


Watch the Top

Because of the molasses and brown sugar, the top can brown before the center is finished.

If it's getting too dark, loosely tent the loaf with foil while it finishes baking.


Check the Center

Start checking around the 55-minute mark. A toothpick should come out mostly clean with a few moist crumbs.


You don't want wet batter, but you also don't want to bake the life out of your banana bread.


Let It Cool

I know the smell is going to make this difficult. But give the loaf time to cool before slicing.


The center continues to set as it cools, and you'll get much cleaner slices.

Storage

Store completely cooled banana “ginger”bread in an airtight container at room temperature for about 3–4 days.


You can also refrigerate it if you prefer, although refrigeration can make the loaf a little firmer.


For longer storage, wrap individual slices tightly and freeze them. Thaw at room temperature whenever the banana bread craving inevitably returns. Because it will.

This Banana “Ginger”bread is my slightly quirky take on two of my favorite cozy baked goods.

It's soft and banana-y, rich with molasses, loaded with gingerbread spices, and topped with a little

cinnamon sugar crunch.


It's not quite banana bread.


It's not quite gingerbread.
