I love a good carrot cake, but sometimes I don't want to make a whole layered cake, worry about decorating it perfectly, or use three different cake pans.
That's where this Carrot Crumb Cake comes in.
It's simple, cozy, and baked right in a 9x9 pan. The cake is packed with freshly shredded carrots, crushed pineapple, Greek yogurt, walnuts, and warm spices. Then we pile on a generous amount of buttery crumb topping and finish everything with a creamy cream cheese glaze.
It's a lot happening in one little pan.
And somehow, that's exactly what makes it so good.

It gives the cake the best moisture and texture.
Don't Overmix
Once your wet and dry ingredients come together, gently fold everything until just combined. Overmixing can make the cake dense.
Make Big Crumbs
Don't worry about making the crumb topping perfectly uniform. Some big chunks are exactly what you want.
Let the Cake Cool
Give the cake time to cool before adding the cream cheese glaze. Otherwise, the glaze can melt right into the cake.
Want More Crunch?
Swap the walnuts for pecans, or use whichever one you have hanging around in your pantry.

Storage
Because of the cream cheese glaze, store the cooled cake in an airtight container in the refrigerator.
For the best texture, let a slice sit at room temperature for a little bit before eating.
You can also freeze the cake without the glaze. Wrap it well, freeze, thaw, and add fresh glaze afterward.
