Fluffy Buttermilk Pancakes

There are pancakes, and then there are pancakes.


You know the ones.


The kind that are tall and fluffy, slightly golden around the edges, soft in the middle, and practically begging for a ridiculous amount of butter and maple syrup.


These are my Fluffy Buttermilk Pancakes, and they have quickly become one of my favorite breakfast recipes when I want something that feels a little more special than cereal but doesn't require me to become a professional brunch chef at 8 a.m.


The secret is the buttermilk.


It gives these pancakes that classic slightly tangy flavor while helping create that soft, fluffy texture we're looking for. Add melted butter, vanilla, and just enough sugar, and you've got a stack that is dangerously easy to keep eating. And because pancakes deserve options, I also love serving these with a quick blueberry topping.


Because apparently regular syrup wasn't enough.

Ingredients You'll Need

For the Pancakes

  • ¼ cup unsalted butter, melted and slightly cooled

  • 2 ¼ cups buttermilk

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 3 tablespoons sugar

  • 2 ¼ cups all-purpose flour

  • 3 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

Optional Blueberry Topping

  • 1 ½ cups frozen blueberries

  • ¼ cup water

  • 1 tablespoon cornstarch

  • 2 tablespoons sugar

Quick Blueberry Topping

If you want to take these pancakes from really good to weekend brunch energy, make the blueberry topping.


It's incredibly simple.


Frozen blueberries are cooked with a little water, sugar, and cornstarch until the berries become warm and juicy and the mixture thickens into a spoonable sauce.

Use Buttermilk

Real buttermilk gives these pancakes their signature flavor and helps create a wonderfully tender texture.


Let the Batter Rest

Give the batter about 10 minutes before cooking. It's a small step that makes a difference.


Don't Overmix

Stop mixing once the dry ingredients are incorporated. A few small lumps are completely fine.


Don't Make the Heat Too High

Medium heat gives the pancakes enough time to cook through while developing that beautiful golden exterior.


Wait for the Bubbles

Don't rush the flip. Once bubbles begin appearing and the pancake has visibly started to rise, you're getting close.


Butter the Pan

A little butter before cooking each batch gives the pancakes those delicious golden edges.



Storing & Reheating

If you somehow have leftover pancakes, which deserves a little applause, let them cool completely before storing them in an airtight container in the refrigerator.


To reheat, warm them in the microwave for a quick breakfast or use a toaster/toaster oven for slightly crispier edges.


You can also freeze pancakes for an easy future breakfast. Place parchment between them, freeze, and reheat whenever the pancake craving strikes.
