There are some recipes that are all about getting creative and throwing everything but the kitchen sink into a bowl.
And then there are recipes where the goal is simply: Make the classic really, really good.
This is my Perfect Pound Cake.
It's rich and buttery without feeling too heavy, with a soft, tender crumb and just a hint of almond flavor hiding behind the vanilla. Sour cream keeps it moist, while the extra egg yolks give the cake that beautiful pound-cake richness.
And because I believe every good slice of pound cake deserves a little something extra, I like serving mine with homemade vanilla whipped cream and fresh berries.
Simple? Yes.
Boring? Absolutely not.

For the Pound Cake
1 cup unsalted butter, room temperature
1 ¼ cups granulated sugar
3 eggs, room temperature
2 egg yolks, room temperature
½ cup sour cream, room temperature
1 ½ teaspoons vanilla extract
½ teaspoon almond extract
1 ½ cups cake flour
½ teaspoon baking powder
¼ teaspoon salt

2 cups heavy cream
½ cup powdered sugar
1 teaspoon vanilla bean paste or vanilla extract

The Butter Needs Some Attention
For this recipe, your butter should be properly softened at room temperature.
Not melted.
Not halfway frozen.
And definitely not the butter you forgot on the counter three days ago.
You want butter that's soft enough to whip easily with the sugar but still holds its shape.
Taking a little extra time here helps create that light and fluffy butter-sugar mixture that gives the cake a beautiful texture.
Don't Rush the Butter and Sugar
This is one of the few times I'll tell you to let the mixer do its thing for a while.
The butter and sugar need about 6–8 minutes to become light and fluffy.
I know.
That's longer than you probably expected. But this is one of those little steps that can make a difference in the final cake. Grab a spatula, scrape the bowl occasionally, and let your mixer earn its keep.

The Signature Pound Cake Crack
Before baking, I like to smooth the batter into the loaf pan and make a shallow slit down the center with a butter knife.
This helps encourage the classic crack down the middle as the pound cake rises.
And let's be honest, that little crack is part of the charm. We're not looking for perfectly smooth.
We're looking for homemade and delicious.
Homemade Whipped Cream Makes Everything Better
Once the pound cake has cooled, it's time for my favorite finishing touch.
Fresh whipped cream.
It's light, fluffy, lightly sweetened, and flavored with vanilla bean paste.
Then add your favorite fresh berries.

My Best Baking Tips
Bring Your Ingredients to Room Temperature
The butter, eggs, egg yolks, and sour cream should be at room temperature. This helps everything incorporate more smoothly.
Don't Overmix After Adding Flour
Once the flour goes in, mix until everything is incorporated and then stop.
We want tender pound cake, not a workout for your jaw.
Don't Forget to Tap the Pan
Gently tapping the filled loaf pan against the counter helps release larger air bubbles before baking.
Check the Center
Start checking around 55 minutes. Your cake should be baked through and have a beautiful golden exterior.
Let It Cool
I know. The smell is rude.
But give the pound cake time to cool before slicing. It allows the crumb to finish setting and makes for much cleaner slices.
Storage
Store the cooled pound cake in an airtight container at room temperature for about 3–4 days.
Store the whipped cream separately in the refrigerator and add it right before serving.
You can also freeze the pound cake without the whipped cream. Wrap it tightly and freeze for up to a few months for the best quality.
