Peyton's Stuffed Peanut Butter Chocolate Cookies

A while back, I made my Stuffed Peanut Butter Cookies, soft peanut butter cookies with a creamy peanut butter center. They quickly became a favorite, and apparently, my little sister Peyton was paying attention.


After experimenting with my original recipe, Peyton decided to put her own spin on it: a chocolate cookie with that same creamy peanut butter center.


And honestly? She was onto something.


That little experiment turned into these Peyton’s Stuffed Peanut Butter Chocolate Cookies. They're soft and chewy, rich with chocolate, filled with a sweet peanut butter center, and rolled in a brown sugar and granulated sugar mixture before baking.


So while the original stuffed peanut butter cookies may have started in my kitchen, these ones are all Peyton.


And I have to give credit where credit is due, my little sister might have created a cookie I like even more than the original.

Ingredients


Peanut Butter Filling

  • 1 cup creamy peanut butter

  • ½ cup powdered sugar

Chocolate Cookie Dough

  • ½ cup unsalted butter, room temperature

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 1 egg + 1 egg yolk, room temperature

  • 1 teaspoon vanilla extract

  • 1¼ cups all-purpose flour + 2 tablespoons

  • ¼ cup cocoa powder

  • ½ teaspoon baking soda

  • ¼ teaspoon baking powder

  • ½ teaspoon salt

For Rolling

  • ¼ cup granulated sugar

  • 1 tablespoon brown sugar



The Peanut Butter Center

The filling is incredibly simple: creamy peanut butter and powdered sugar.


Mix them together, portion the mixture into little 1-inch balls, and freeze them for at least two hours.


This is one step you don't want to skip.


Freezing the filling makes it firm enough to tuck inside the chocolate cookie dough without becoming a sticky disaster.


Keep the peanut butter balls in the freezer until you're ready to assemble the cookies.



What Makes Peyton's Cookies Special?

Traditional peanut butter cookies are great.


Chocolate cookies are great.


But combine the two and then hide a creamy peanut butter center inside?


Now we're getting somewhere.


The chocolate cookie dough gives these cookies a rich, slightly fudgy flavor while the peanut butter filling adds a creamy, sweet center.


They're basically a homemade chocolate peanut butter cup in cookie form.


And that was Peyton's idea. I just made sure we could eat it.


A Few Tips for Perfect Stuffed Cookies


Freeze the Peanut Butter Filling

The peanut butter balls should be frozen for at least 2 hours before assembling the cookies. If you're making these ahead, you can prepare the filling balls and keep them frozen until you're ready to bake.


Don't Skip the Dough Chill

After mixing the cookie dough, refrigerate it for 15–20 minutes.


This makes the dough easier to handle and helps prevent the cookies from spreading too much in the oven.


Make Sure the Filling Is Completely Covered

Flatten your dough slightly, place a frozen peanut butter ball in the center, and gently wrap the dough around it.


Pinch any openings closed and roll the dough between your hands until you have a smooth ball.


No cracks. No holes. No peanut butter escape routes.


Don't Overmix. Once the dry ingredients go in, mix just until the dough comes together.

Overmixing can make your cookies tougher, and we're going for soft and chewy, not accidentally crunchy.

The Sugar Coating

Here's where I changed things up a little.


Instead of rolling these cookies in plain granulated sugar, they're coated in a combination of granulated sugar and brown sugar.


The granulated sugar gives the outside a little texture, while the brown sugar adds a subtle caramel-like flavor.


It's a small detail, but it makes the outside of the cookie extra good. And considering we're already stuffing a cookie with peanut butter, I figured we might as well keep going.



Don't Overbake These

Bake the cookies at 375°F for 12–14 minutes.


You want the cookies to look puffed with lightly golden, crinkled edges while the centers still look slightly soft.


Do not wait for the centers to look completely done.


They'll continue baking on the hot baking sheet after you pull them from the oven.


Let them cool on the baking sheet for 5–10 minutes before transferring them to a wire rack.


This helps the cookies finish setting while keeping that soft center.


Storage

Store completely cooled cookies in an airtight container at room temperature for several days.


For an extra-good experience, warm one in the microwave for a few seconds before eating.


That peanut butter center gets soft and creamy again, and honestly, that's when these cookies really shine.


You can also freeze the baked cookies and thaw them at room temperature when you're ready for them.
