There are peanut butter cookies… and then there are peanut butter cookies stuffed with even more peanut butter.
Because apparently regular peanut butter cookies weren't doing enough.
These Stuffed Peanut Butter Cookies are soft, chewy, slightly crisp around the edges, and filled with a creamy peanut butter center that gets wonderfully gooey when the cookies are warm.
And yes, there is a little extra work involved because we have to freeze the peanut butter filling first.
But once you bite into one and hit that soft peanut butter center, you'll understand why we bothered.

Ingredients
Peanut Butter Filling
1 cup creamy peanut butter
½ cup powdered sugar
Peanut Butter Cookie Dough
½ cup unsalted butter, room temperature
½ cup brown sugar
¼ cup granulated sugar
¼ cup granulated sugar, for rolling
½ cup peanut butter
1 egg + 1 egg yolk, room temperature
1 teaspoon vanilla extract
1½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt

The Secret Is the Peanut Butter Filling
The filling is incredibly simple: just peanut butter and powdered sugar.
Mix them together, portion the mixture into small balls, and freeze them for at least two hours.
Freezing the filling is important because it makes the peanut butter much easier to work with when you're stuffing the cookies. If the filling is soft, it can become messy very quickly.
And nobody wants to fight with a blob of peanut butter while trying to make cookies. Keep those little peanut butter balls frozen until you're ready to assemble.
How to Stuff the Cookies
This is probably the most important part of the recipe.
Take a scoop of cookie dough and flatten it slightly in your hands. Place one frozen peanut butter ball in the center, then gently bring the dough up and around the filling.
Make sure the peanut butter filling is completely sealed inside.
You don't want any cracks or exposed filling before baking. Otherwise, your peanut butter may decide to make a dramatic escape.
Once sealed, roll the dough ball in granulated sugar and place it on your baking sheet.

Don't Skip Freezing the Filling
The peanut butter filling needs to be firm before you start stuffing the cookies. I recommend freezing it for the full two hours, although you can prepare the filling balls the day before.

Seal the Dough Completely
Take your time when wrapping the dough around the frozen filling. Pinch any seams closed and gently roll the dough between your hands to make sure everything is sealed.
Watch the Baking Time
These cookies are baked at 375°F for 12–14 minutes.
You want the edges lightly golden and crinkled while the centers still look slightly soft.
Don't wait for the centers to look completely done in the oven. They'll continue cooking as they cool on the baking sheet. And that's how we keep that soft middle.

Store completely cooled cookies in an airtight container at room temperature for several days.
