Chewy Gingerbread Cookies

There are a lot of gingerbread cookies out there, but I'm going to make a very strong case for these.
They're soft in the middle, lightly crisp around the edges, packed with molasses and warm spices, and finished with a little coarse sugar that gives them the tiniest bit of crunch. Basically, they're everything I want a Christmas cookie to be without requiring me to pull out a rolling pin and spend three hours decorating tiny gingerbread people.
We're keeping things cozy over here.
And let's talk about the smell. The second these hit the oven, your kitchen starts smelling like Christmas. Cinnamon, ginger, cloves, brown sugar, and molasses all doing their thing. It's almost unfair.

Ingredients You'll Need

Coarse sugar or turbinado sugar, for rolling
The coarse sugar is optional, but I highly recommend it!
My Tips for Perfect Gingerbread Cookies
Don't Overbake Them
This is probably the most important tip.
If you want chewy gingerbread cookies, take them out while the centers still look soft.
If you wait until they look completely baked, you'll end up with a much firmer cookie.
Use Dark Brown Sugar
Dark brown sugar gives these cookies a deeper molasses flavor and helps keep them soft.
Don't Skip the Cornstarch
It's a small amount, but it helps create that soft, tender texture.
Try the Coarse Sugar
Technically, it's optional.
But the little crunch from turbinado sugar against the chewy gingerbread cookie?
So good.
Why Are My Gingerbread Cookies Hard?
If your cookies turned out harder than expected, the most likely culprit is overbaking.
Remember: the centers should still look a little underdone when they come out of the oven.
They'll continue baking as they cool. Think of it as trusting your cookie instincts.
Or, more realistically, trusting the recipe when every part of your brain is telling you, "Those look like they need another five minutes."
Can I Make These Ahead of Time?
Absolutely! These are a great cookie to make ahead for the holidays. Store completely cooled cookies in an airtight container at room temperature for up to 5 days.
You can also freeze the baked cookies for up to 3 months. Let them thaw at room temperature before enjoying.
