Okay, I'm going to be honest with you right from the beginning:


These cookies take a little work.


They're not the kind of cookie you throw together in 20 minutes while casually watching a Christmas movie. There are a few extra steps, there's some shaping involved, and at some point you may look at your snowmen and wonder if they actually look like snowmen.


Keep going.


Because once they're filled with white chocolate ganache and decorated with little faces, scarves, buttons, and carrot noses, they become so ridiculously cute that you'll forget about all the questionable-looking snowmen that came before them.


These Chewy Gingerbread Snowman Cookies are soft, warmly spiced, and full of classic gingerbread flavor from brown sugar, molasses, cinnamon, ginger, cloves, and nutmeg. But the real fun is the little snowman-shaped indent filled with creamy white chocolate ganache.


They're part cookie, part Christmas craft, and honestly, part patience test. 😂

But that's what makes them so fun to make.

Ingredients You'll Need

Gingerbread Cookies

  • Unsalted butter

  • Dark brown sugar

  • Molasses

  • Cinnamon

  • Ground ginger

  • White chocolate

  • Heavy cream

How to Make Gingerbread Snowman Cookies

This recipe has a few more steps than my usual cookies, so don't rush it. The best part is that you don't have to make every snowman look exactly the same.


In fact, please don't.


A snowman with one crooked eye and a slightly questionable scarf just has more personality.


Step 1: Make the Gingerbread Dough

Start by preheating your oven to 350°F and lining two baking sheets with parchment paper.

In your stand mixer, beat the softened butter and dark brown sugar together until they're light, fluffy, and creamy.


Give it about 2 minutes on medium-high.


Then scrape down the sides of the bowl and add the molasses, honey, and vanilla. Mix until everything is combined. Add your egg and mix again until smooth.

A little tip:

Make sure your butter is softened at room temperature, not melted.

We want creamy cookie dough, not gingerbread soup.

Step 2: Add the Dry Ingredients

Add the flour, baking soda, cornstarch, cinnamon, ginger, cloves, nutmeg, and salt.

Mix on low just until the flour disappears.


Do not overmix.


Once you no longer see streaks of flour, stop. Your dough should be soft and workable.

Step 3: Scoop Your Cookies

Scoop the dough into evenly sized balls, roughly 2 tablespoons each.

Place them on your parchment-lined baking sheets, leaving space between each cookie.

Try to keep your cookies relatively similar in size. This becomes especially important later because you'll be making the snowman shapes while they're warm.

Step 4: Bake—but Don't Walk Away!

Bake the cookies for about 11–13 minutes.


You're looking for cookies that have puffed up, with edges that look slightly set while the centers still look soft.


Do not wait for the centers to look completely baked.

Remember, these are supposed to be chewy. And we're about to do something very important...

Step 5: Make the Snowman Shape

THIS IS THE IMPORTANT PART.

You need to make your snowman indent while the cookies are still warm.


Once they cool, they'll be much harder to shape.


Take the back of a rounded ½ tablespoon measuring spoon and gently press into the lower portion of the cookie to create the snowman's body. Then use the back of a 1 teaspoon measuring spoon to create the head. You should end up with something roughly like: ○◯


Okay, maybe not exactly that. 😂


Be Gentle Don't press too hard. You're creating an indentation... not trying to excavate a snowman-shaped crater. If the cookie cracks, don't panic. You can gently press the edges back together while they're still warm. And if one completely falls apart?


Congratulations. You have been selected for the official baker's taste test.

Step 6: Let the Cookies Cool Completely

This is the part where you have to practice patience. Let the cookies cool completely before adding the ganache.


If you add the ganache while the cookies are still warm, it can become too runny and make your adorable little snowmen look like they're melting.

Step 7: Make the White Chocolate Ganache

While the cookies cool, make your ganache.


Add the white chocolate and heavy cream to a microwave-safe bowl.

Heat in 30-second intervals, stirring between each interval until completely smooth.

This usually takes around 1½–2 minutes total, but every microwave is different.

If the ganache looks slightly yellow instead of bright white, add a small amount of white food coloring.


Mix until smooth.


Then wait!


Let the ganache cool for about 5–10 minutes so it thickens slightly.

You don't want it completely liquid when you pipe it into the cookies.

Step 8: Fill Your Snowmen

Transfer the ganache into a piping bag.

Pipe the ganache into the snowman indent, filling both the head and body.

Try not to overfill them. You want the ganache to sit nicely inside the snowman shape rather than overflowing onto the cookie.

Ganache Troubleshooting

Too runny?

Let it cool for a few more minutes.

Too thick?

Warm it for about 5–10 seconds, stir, and check the consistency again.

Small adjustments are your friend here.

Step 9: Decorate Your Snowmen!

And now comes the best part.

Give your snowmen some personality.


Use orange sprinkles for little carrot noses. Use royal icing for:

  • Eyes

  • Smiles

  • Scarves

  • Buttons

  • Arms

  • Little hats

You can also add holiday sprinkles for some extra Christmas sparkle.


And don't worry if they're not perfect. One snowman might have a crooked smile.

Another might have three buttons instead of two. Another might look slightly concerned about the weather.


That's okay. They're handmade snowmen.

Store the decorated cookies in an airtight container at room temperature.

Because of the white chocolate ganache, I recommend enjoying them within 3–4 days for the best texture and freshness.


You can also make the gingerbread cookies ahead of time and decorate them later once they've completely cooled.
