And honestly, I respect that.
These Classic Snickerdoodles are soft and chewy in the center, slightly crisp around the edges, and completely covered in cinnamon sugar. They're simple, cozy, and exactly the kind of cookie I want sitting on the kitchen counter with a cup of coffee or a glass of milk nearby. Sometimes classic really is better.

So...What Actually Makes a Snickerdoodle a Snickerdoodle?
The answer is cream of tartar.
It might seem like an unusual ingredient if you haven't made snickerdoodles before, but don't skip it.
Cream of tartar gives these cookies that slightly tangy flavor that separates a snickerdoodle from a regular sugar cookie that's been rolled in cinnamon sugar.
That's the secret. Well, that and the fact that we're basically giving the cookie a cinnamon-sugar bath before it goes into the oven.

A Few Tips for Soft, Chewy Snickerdoodles
Don't Overmix the Dough
Once your dry ingredients are incorporated, stop mixing.
You want the dough to come together without overworking it.
Don't Skip the Cream of Tartar
This is what gives snickerdoodles their signature flavor and texture.
If you leave it out, you're essentially making a cinnamon sugar cookie.
Don't Overbake
This is my biggest cookie rule.
The cookies should look puffed and slightly crinkled around the edges while the centers still look soft when they come out of the oven.
They'll continue baking on the hot baking sheet as they cool.
That soft center is exactly what we're after.
Give Them Room
These cookies spread as they bake, so leave about 2 inches between each dough ball.
Unless you're trying to make one enormous cinnamon sugar cookie. Which, admittedly, does sound kind of fun.

Storage
Store completely cooled cookies in an airtight container at room temperature for up to 5 days.
You can also freeze the baked cookies for longer storage.
For the best texture, let frozen cookies thaw at room temperature before serving. If you want that fresh-baked softness again, a few seconds in the microwave can also do the trick.
