That's exactly what we're doing. These cookies are soft and chewy with all those cozy gingerbread spices, ginger, cinnamon, cloves, and nutmeg, and then you bite into the center and get this creamy, slightly sweet filling.
It's basically gingerbread + cheesecake in cookie form.
And I don't know about you, but I'm having a hard time thinking of a better combination.
These do take a little more patience than a regular batch of cookies because the cream cheese filling needs to freeze before you stuff the dough. But once you get past that step, the rest comes together pretty easily.

The Secret Is in the Filling
The most important part of these cookies is actually something you make before you make the cookie dough. The cream cheese filling needs to be mixed together, portioned into little balls, and frozen until completely solid.
And yes, 2–4 hours is a long time to stare at a bowl of cookie ingredients and wait.
But there's a reason.
The frozen cream cheese balls are much easier to wrap with the gingerbread dough, and they help keep that creamy center tucked inside while the cookies bake. Think of it as the little hidden treasure inside your cookie.

A Few Tips for Stuffing the Cookies
Make Sure the Cream Cheese Is Frozen
This is the big one.
Don't try to rush this part. If the cream cheese isn't completely frozen, it will be much harder to work with and can make stuffing the cookies a mess.
Don't Make the Dough Too Thin
When flattening your cookie dough, leave enough dough around the cream cheese so you can completely seal it inside.
You don't want any little cracks or openings.
Otherwise, the filling may decide it wants to escape. And while I fully support a rebellious cookie, we want the cream cheese to stay inside.
Seal the Dough Completely
Once the frozen cream cheese is in the center, gently wrap the gingerbread dough around it and pinch the seams closed.
Then roll it between your hands into a smooth ball.
If you can see the cream cheese, keep working the dough around it until it's completely covered.

A Few Baking Tips
Don't Overbake
These cookies should look slightly soft when they come out of the oven.
The edges should be set and the cookies should be puffed, but don't wait until they're completely firm.
They'll continue to set as they cool.
Let Them Cool
I know. But give them some time to cool on the baking sheet so the cookie can firm up and the filling can settle.
Use Vanilla Bean Paste If You Have It
Vanilla extract works perfectly fine, but vanilla bean paste gives the cream cheese filling a little extra flavor and makes it feel just a bit more special.
Storage
Because these cookies contain a cream cheese filling, I recommend storing them in an airtight container in the refrigerator.
They'll keep for about 4–5 days.
Let them sit at room temperature for a little while before serving if you prefer a softer cookie.
You can also freeze the assembled, unbaked cookies and bake them later. Just be sure to adjust the baking time as needed.
