No-Bake Nutter Butter Cheesecake Bars

If peanut butter and Nutter Butters are your love language, we need to talk about these cheesecake bars.
These No-Bake Nutter Butter Cheesecake Bars are creamy, peanut-buttery, crunchy, and ridiculously easy to make. No oven. No complicated cheesecake water bath. No worrying about cracks.
Just a buttery Nutter Butter crust, a fluffy peanut butter cheesecake filling, even more Nutter Butter chunks, and a little cookie crumble on top.
Basically, I took a classic Nutter Butter and asked, “What if we made this into cheesecake?”
And I'm very happy with the answer.

The Best Part: That Nutter Butter Crust
Instead of using a traditional graham cracker crust, these bars go all in on the peanut butter theme with a Nutter Butter cookie crust.
Crush the cookies, mix them with melted butter, and press most of the mixture firmly into your 9x9 pan.
But don't use it all!
Save some of that buttery cookie mixture for the top. Once it's crumbled over the cheesecake, you get a little bit of crunch with every bite.
And honestly, that's one of my favorite parts.
A Few Tips for the Perfect No-Bake Cheesecake Bars
Soften the Cream Cheese
Let the cream cheese sit at room temperature for about 30 minutes before mixing. This makes it much easier to get a smooth, creamy filling without little lumps of cream cheese hiding throughout.
Don't Skip the Chill Time
These bars need at least 6 hours in the refrigerator to properly set.
For an even easier dessert, make them the night before and let them chill overnight.
Use Creamy Peanut Butter
Creamy peanut butter gives the filling that smooth, rich texture we're looking for. Save the crunchy peanut butter for toast.
We're already getting plenty of texture from those Nutter Butter pieces.
Don't Forget the Cookie Chunks
The filling isn't just peanut butter cheesecake.
There are actual Nutter Butter chunks folded right into it.
Don't crush them completely. Bigger pieces give you little pockets of cookie throughout the creamy filling.

Make-Ahead Dessert
These are actually perfect for making ahead.
Prepare the bars the night before, cover them tightly, and let them chill overnight. The extra time in the refrigerator allows the filling to become even firmer and easier to slice.
They're a great option when you want dessert ready before guests arrive without having to bake something that day.
Storage
Keep the cheesecake bars refrigerated in an airtight container or tightly covered baking dish.
Because the filling is cream cheese-based, these should stay refrigerated until you're ready to serve them.
