Let's be honest: there are a lot of brownie opinions out there. Some people want cakey brownies, some want fudgy brownies, and some people, like me... want the brownie that looks slightly underbaked in the middle and makes you question whether you should have waited for it to cool.


These Perfect Gooey Brownies are for the fudgy brownie people. They're rich, chocolatey, chewy around the edges, and wonderfully gooey in the center. And because apparently regular chocolate chips weren't enough, there's also dark chocolate chips mixed in for even more chocolate in every bite.


Basically, if you're going to make brownies, you might as well go all in. 🍫

Instructions

  1. Preheat the oven to 350°F. Line a 9×9 metal pan with parchment paper and set aside.

  2. In a large bowl, whisk the cocoa powder and vanilla into the warm melted butter until smooth and glossy. This step helps bloom the cocoa and deepen the chocolate flavor.

  3. In a separate large bowl, add the eggs, egg yolk, granulated sugar, and brown sugar. Using an electric hand mixer, whisk for 2–4 minutes until the mixture looks slightly thickened, airy, and lighter in color.

  4. Pour the cocoa-butter mixture into the egg mixture and gently fold together with a spatula until fully combined.


5. Add the flour, baking soda, and salt. Continue folding just until incorporated. When only a few streaks of flour remain, add the chocolate chips and fold until evenly mixed.

6. Spread the batter evenly into the prepared pan.

7. Bake for 27–30 minutes, until the edges are set and the center is just barely firm. A toothpick should come out with moist crumbs, not wet batter.

8. Let the brownies cool for at least 30 minutes before slicing.


What Makes These Brownies So Gooey?

The secret is in the combination of melted butter, extra egg yolk, cocoa powder, and plenty of chocolate chips.


The extra egg yolk adds richness without adding too much moisture, helping create that chewy, fudgy texture. The melted butter also gives these brownies a wonderfully rich base, while the combination of regular and dark chocolate chips means you're getting melty chocolate in basically every bite.


And the biggest secret of all? Don't overbake them.


The center should look just barely set when they come out of the oven. They'll continue cooking and setting as they cool, which is how you get that perfectly gooey middle.

Don't Skip the Extra Egg Yolk

That extra yolk helps give these brownies their rich and chewy texture. It's a small step that makes a noticeable difference.


Whip the Eggs and Sugar

Don't rush the step where you mix the eggs and sugars. Whisking them until they're slightly lighter and airy helps create that beautiful brownie texture.


Fold by Hand

Once the cocoa mixture goes into the eggs, switch to a spatula. Gently folding the batter helps keep the brownies dense and fudgy.


Don't Overbake!

This is probably the most important tip. You're looking for set edges and a center that's just barely firm. If the middle looks completely done when you pull them out, you've probably gone a little too far.

Remember: the brownies continue to set while they cool.


Let Them Cool

I know. You smell chocolate, the brownies are sitting right there, and you're supposed to wait.


But give them at least 30 minutes before slicing. You'll get much cleaner cuts and that beautiful gooey center without the entire brownie falling apart.


Storage

Store the brownies in an airtight container at room temperature for up to 4 days.

You can also freeze them for up to 3 months. Wrap individual brownies tightly and store them in a freezer-safe container.


For an extra-indulgent treat, warm a brownie in the microwave for a few seconds before serving. Add a scoop of vanilla ice cream and you've officially entered dessert heaven.

These brownies have quickly become the kind of recipe I'd make when I want something really chocolatey without needing a complicated recipe. They're simple, rich, and gooey in exactly the way a brownie should be.
