Sugar Cookie Bars with Cream Cheese Frosting

If you love sugar cookies but don't love scooping, rolling, baking batch after batch, and somehow ending up with flour in places flour should never be… these bars are for you.

These Sugar Cookie Bars with Cream Cheese Frosting have everything I love about a classic sugar cookie, but in an easy-to-make bar form. They're soft, chewy, buttery, and full of vanilla flavor, with a little almond extract to give them that classic bakery-style taste.

And then we add a layer of creamy vanilla cream cheese frosting and finish everything with sprinkles, because sometimes a dessert just needs a little extra personality.

No rolling pin. No cookie cutters. No baking six trays of cookies.

Just one pan of sugar cookie goodness.

Why You'll Love These Bars

  • Soft and chewy: The extra egg yolk helps give the bars a tender texture.

  • Classic sugar cookie flavor: Vanilla and almond extract make these taste like your favorite frosted sugar cookies.

  • Creamy frosting: A tangy cream cheese frosting balances the sweetness of the bars.

  • Easy to make: Everything bakes together in one 9x13 pan.

Ingredients

Sugar Cookie Bars

  • 12 tablespoons unsalted butter, room temperature

  • 1½ cups granulated sugar

  • 2 eggs, room temperature

  • 1 egg yolk, room temperature

  • 1 tablespoon vanilla extract

  • ½ teaspoon almond extract

  • 2½ cups all-purpose flour

  • 1½ teaspoons baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • Sprinkles for topping, optional

Cream Cheese Frosting

  • 3 ounces cream cheese, softened

  • 6 tablespoons unsalted butter, softened

  • 1¾ cups powdered sugar

  • ¼ teaspoon salt

  • 1½ teaspoons vanilla bean paste or vanilla extract

  • 2 tablespoons milk

What Makes These Sugar Cookie Bars So Good?

The secret to these bars is keeping the texture soft and tender while getting that familiar sugar cookie flavor.

Using two eggs plus an extra egg yolk adds richness and helps create a soft, chewy center. The vanilla and almond extracts give the bars that classic frosted sugar cookie flavor without making them taste overly sweet.

And because we're baking everything in one pan, you get soft centers with lightly golden edges in every slice.

It's basically the best part of a sugar cookie without all the extra work.

The Cream Cheese Frosting

Let's be honest: the frosting deserves a little attention of its own. This isn't just a basic buttercream. The cream cheese adds a slight tang that balances the sweetness of the sugar cookie bars, while the vanilla bean paste gives it a lovely vanilla flavor. A few tips for getting it just right:

  • Use softened ingredients. Let the cream cheese and butter soften before mixing so the frosting turns out smooth instead of lumpy.

  • Adjust the consistency slowly. If the frosting is too thick, add milk a little at a time. If it's too thin, add powdered sugar one spoonful at a time.

  • Wait for the bars to cool completely. Frosting warm bars is a recipe for melted frosting and a very messy situation. Delicious? Maybe. Pretty? Not so much.

Once the frosting is spread evenly over the bars, add your favorite sprinkles.

A Few Tips for Perfect Sugar Cookie Bars

Don't Overmix the Dough

Once you add the flour, mix on low speed just until everything is combined. Overmixing can develop too much gluten and make the bars tougher instead of soft and tender.

Press the Dough Evenly Into the Pan

The dough will be thick, so use your hands or a spatula to gently press it into an even layer in your parchment-lined 9x13 pan. This helps the bars bake evenly.

Watch the Edges

Bake at 350°F for 24–26 minutes, or until the edges are lightly golden and the center is set.

You don't want to wait until the entire top is deeply golden. The bars will continue to set as they cool, and overbaking can leave you with a dry sugar cookie bar.

How to Store Sugar Cookie Bars with Cream Cheese Frosting

Because these bars have cream cheese frosting, they should be stored in the refrigerator, rather than left out at room temperature for extended periods.

In the Refrigerator

  • Place the bars in an airtight container or cover the pan tightly.

  • Refrigerate for up to 5 days for the best quality.

  • If stacking the bars, place parchment paper between the layers to help protect the frosting.

The frosting will firm up in the refrigerator, so I recommend letting an individual bar sit at room temperature for about 10–20 minutes before serving for a softer texture.

Don't leave the bars sitting out for more than 2 hours total, or 1 hour if the temperature is above 90°F.

Can You Freeze Them?

Yes! These bars freeze well.

For the best results, chill the frosted bars until the frosting is firm. Cut them into individual portions, then wrap each bar tightly in plastic wrap and place them in a freezer-safe airtight container.

Freeze for up to 2 months for the best quality. Thaw the bars in the refrigerator overnight, then let them sit at room temperature briefly before serving.

These Sugar Cookie Bars with Cream Cheese Frosting are proof that sometimes the easiest version of a classic dessert is the one you end up making over and over again.
